Fabio graduated Summa Cum Laude from the University of Padova and Perugia, Italy, with a Master’s degree in Food Science and Human Nutrition. Immediately after, he worked as a Food Development Consultant at New-Food Innovation, one of the UK’s leading food innovation consultancy firms. He is currently the lead Food Development Consultant for 3FBIO, a UK-based biotech SME that aims to produce mycoprotein for B2B purposes. In this role, he single-handedly drives 3FBIO’s product development agenda and has diversified the applications of the material as a meat-alternative ingredient in snacks, noodles, and pet foods. His passion for plant-based foods and his close ties to Indonesia made him realise the potential of tempeh in accelerating society’s transition towards a more sustainable future and as a potential driver for the alleviation of protein-energy malnutrition.
