We have developed a brand new ‘Alternative Carbohydrate Food-Systems-Model for the Healthier Reformulation of Ultra-Processed Foods’ – and from that developed a clean-label ‘Impact Blend’ of ingredients that offsets the blood glucose rush associated with carb-based ultra-processed foods, and also optimises gut health with targeted prebiotics and bioactive compounds – all of which is now at an advanced stage of producing healthy industrial bread in a collaboration with a €450m sales UK bread producer and a national UK retailer.
