Innovation description SMART ICE is technological process of food production – a special approach to ingredients preparation, cooking process, packing of dished. SMART ICE – artificial intelligence which includes algorithms for ingredients combining, ways to turn ingredients into elements of a dish, accounting of temperature, time, and chemical processes through the prism of interaction with temperature curves at different stages of food production. SMART ICE Facility is the unit for ultra-intensive freezing of food products, which contains several innovative engineering and software solutions which use artificial intelligence and machine vision. The unit is capable to freeze ready-to-eat dishes and guarantee full preservation of organoleptic characteristics (taste, useful properties, appearance) for a period of 180 days. SMART oven QUMMY is robot oven without buttons, it recognizes the dish and automatically generate the program to exit from ice condition and further finishing of dish cooking. It lets to get fully cooked restaurant quality dish in 6 minutes.
