We asked our FoodTech 500 top-runners to give us a bit of insight into how they started out as a company and their thoughts on the role of technology in Food innovation. Meet Ashley, the founder of The Food Corridor, a platform that connects food entrepreneurs to commercial kitchen space. Let’s see what she had to say.

So tell us a little bit more about you! Where did the idea for your FoodTech company come from?

Ashley: I was conducting my doctoral research and wanted to apply the sharing economy to underutilized assets in the food system. My goal was to help regionalize and sustain local food systems.

How is tech central to your business?

Ashley: Our platform enables shared kitchens to reduce redundancy and automate manual tasks.

Why do you think it’s important to see the food industry embrace tech?

Ashley: Embracing technology enables regional and local food systems to obtain efficiency, growth, and innovation, which are critical to sustainability.
